Copycat Chipotle® Cilantro-Lime Brown Rice Recipe
This cilantro-lime brown rice recipe is a close spin-off on the popular Mexican-inspired restaurant chain's cilantro-lime rice.
Good tasting recipe. I usually add my stuff to rice before I cook it so I wasn't sure about this method. It was great. I made my rice a bit drier so it would absorb the lime. I used white rice since I was short on time. Goes well with anything, especially Mexican and Thai.
We used white rice, but this turned out so wonderfully fluffy! Not sticky at all and it was done so fast. The lime, cilantro and salt added great flavor. I’ve saved this as a go-to for cilantro lime rice.
Simple and tasty! I mixed all the 'dressing' ingredients and cilantro a little before I cooked the rice and just mixed it all together when the rice was done. This went great w/ our 'Lettuce Leaf Tacos' and 'Easy Refried Black Beans', both from this site. Thanks for sharing. :)

I made this with Mahatma Jasmine rice in my instant pot. 1:1 rice to water. It was amazing! The rice was tender but every grain was separate from each other. Then I tried it with a varying amount of lime zest and it got even better!
Like others, I made this exactly how the recipe says and it was too gluey. To fix that, next time I will rinse the rice first, add a little of Avacado oil to the water and let it sit for 15 minutes before I cook it. This is how my white rice recipe tells me to make it and it always turns out wonderful. It does make a lot, but I love leftovers. I loved the taste of this and will be making it again!
